
Raclette


Raclette – what a wonderful cheese! It is a Swiss semi-firm cheese made from cow’s milk and is perfect for melting. Traditionally, this cheese is heated and, as you can see in the image, and scraped onto the diner’s plate. The tradition is that the cut side of the round is placed in front of an open fire.
The story goes that Swiss cowherds would take rounds of raclette to the pastures where the cows were grazing. They would heat the cheese in front of their campfires in the evenings.
Today, you can buy special raclette pans/grills. Slices of raclette are placed into small non-stick pans called coupettes.These are then placed on the lower tray of the grill leaving the upper surface free to grill meats and vegetables if you wish. Pickles are often served alongside this dish, particularly cornichons, crisp baby cucumbers in white wine vinegar. Typically it is served with white wine. Try a raclette dinner party! Assemble the foods, set your raclette grill on the table and your guests can create their own dinner.
